In the Levant, sawda – Sauda on our menu – means fried liver, and it’s one of those dishes you’re more likely to find in family kitchens and little snack bars than on fancy menus. In Syria, Lebanon and Iraq, liver is often eaten in the morning or at lunchtime – hot from the pan, with bread, lemon and fresh vegetables.

How we serve sawda

At Dunya in Mannheim we use tender lamb liver. It goes into a hot pan and is seared until it’s nicely browned outside and still juicy inside. Then it’s finished with fragrant garlic and freshly squeezed lemon.

On the plate, it comes with lemon wedges, tomato and cucumber, plus warm flatbread. Squeeze the lemon generously over the liver – it makes the dish light and fresh. Liver doesn’t like long cooking: leave it in the pan too long and it turns firm and dry. That’s why sawda is best eaten straight away.

Who sawda is for

Sawda isn’t for everyone, and it doesn’t try to be. If you know and love liver from Arabic or Turkish cooking, this is for you. If you’re curious, share a portion at the table and give it a try.

Fresh partners go well alongside: a bowl of tabbouleh or fattoush, and something mild like hummus. If you want to stick with lamb afterwards, order a tikka skewer or mansaf.

More from our hot kitchen

Besides sawda, we have other hot starters with meat, such as kibbeh and hummus bil lahme. You’ll find all our dishes on the menu.
