Hummus topped with meat is a classic in Lebanon and Syria, especially when an everyday bowl of hummus needs to become something special. ‘Lahme’ simply means ‘meat’. The appeal lies in the contrast: the dip stays cool and smooth, the meat comes straight from the pan, and its juices seep into the hummus.
How we serve hummus bil lahme
At Dunya in Mannheim we spread a bed of velvety smooth chickpea purée in the bowl. On top goes a generous helping of tender, juicy lamb, glistening in its own spiced pan juices and seasoned with Middle Eastern spices. Cool cucumber slices, fresh mint and a cherry tomato add freshness.
Eat it with warm flatbread. The trick is to dip so that the hummus, meat and juices all end up on the bread together. Don’t let it sit for too long – the contrast is at its best while the meat is still hot.
When to order it
Hummus bil lahme is a hot starter for meat lovers. In a group, it complements cold mezze like baba ganoush or muhammara. If you’re eating alone, flatbread and a small fattoush turn it into a complete lunch.

What comes next
If you want to stick with lamb, choose maqluba with lamb, mansaf or, for a special occasion, kharouf mahshi as your main. For parties, we also put together hot and cold starters as catering.
