Kharouf mahshi is the dish that makes the grand entrance in Syria. At weddings, engagements and family celebrations it takes pride of place in the middle of the table – traditionally as a whole lamb stuffed with spiced rice. At Dunya you can order it as a single portion with lamb shank, or as a feast menu for celebrations.

What ‘mahshi’ means

Kharouf is lamb, mahshi means stuffed. The stuffing is what the dish is built around: rice with peas, vegetables and nuts. We add crunchy pistachios, which give the rice colour and bite.

Cool sauce, warm lamb

The yoghurt and cucumber sauce, finished with a dusting of pepper, is the counterpoint to the rich lamb. Add it a spoonful at a time to keep every bite fresh. A tomato salad rounds things off.

How it compares with our other lamb dishes

The peas, pistachios and yoghurt and cucumber sauce are what set it apart. With chickpeas, raisins and white beans, it’s quzi; smoky, it’s the lamb shank mandi; with Jordanian yoghurt sauce, it’s mansaf.

Kharouf mahshi for catering

For weddings and big celebrations there’s a feast menu with kharouf mahshi as the centrepiece, mezze to start and knafeh to finish. Find out more on our wedding catering page. If you’d like to celebrate in a space of your own, our event hall has room for 70–80 guests. In the restaurant, hummus and fattoush make good starters.
