In Jordan, there’s hardly a celebration without mansaf. At weddings, for Eid, when a family member comes home – the big platter of rice and lamb always sits in the middle. We serve it as mansaf urduni – the Jordanian way.

Lamb in yoghurt

What makes mansaf special is the cooking liquid. The lamb isn’t braised in water or tomato, but in a rich yoghurt sauce. In Jordan this is traditionally made with jameed, the dried and salted yoghurt of Bedouin cooking. In ours, cumin, garlic and mint give the sauce its flavour.

How to eat mansaf

Traditionally, mansaf is served on a large platter with thin flatbread under the rice. Everyone eats from the same platter – in the old days, with the right hand. We serve it as an individual plate: rice scattered generously with toasted almonds, the lamb on top, and the yoghurt sauce on the side for pouring.

How it compares with our other lamb dishes

Yoghurt links mansaf to kibbeh bil laban, which uses bulgur balls instead of lamb. A cool yoghurt and cucumber sauce with lamb and pistachio rice is kharouf mahshi, while lamb layered with aubergines is maqluba.

Starters and celebrations

Fresh mezze like tabbouleh or baba ganoush make good starters. For weddings and family celebrations, take a look at our wedding catering – or celebrate in our own event hall.
