In Syria and Lebanon, kibbeh is more than a dish – there are dozens of kinds: fried, baked, raw, grilled or in a sauce. Kibbeh bil laban is the version made at home when you want something warm and comforting. If you’d like kibbeh as a main course, this is the one to order.

Bulgur and minced meat

The shell is made from bulgur, shaped into small balls and filled with spiced minced meat. As a starter, kibbeh is usually fried. For kibbeh bil laban, it goes into a warm yoghurt sauce.

Yoghurt, served hot

Cooked yoghurt is common in Levantine cooking, though new to many people in Germany. The sauce is velvety and mildly tangy, with fresh coriander adding a green note and a sprinkling of chopped pistachios on top. It comes with rice topped with toasted flaked almonds and a fresh side salad.

Kibbeh on our menu

  • Kibbeh: the crispy version, as a hot starter.
  • Kibbeh mishwiyyeh: the grilled version.
  • Kibbeh bil laban: as a main course in yoghurt sauce.

Yoghurt sauce also plays the lead role in mansaf, this time with lamb. For meatballs in tomato sauce instead of yoghurt, there’s Dawood Basha.

To start

Because the yoghurt sauce is creamy, a crunchy starter works well: fattoush or a small portion of muhammara with bread.
