Baba Ganoush – aubergine with a smoky edge

Smoky, creamy and topped with crunchy pine nuts: baba ganoush shows the aubergine at its very best.

5,90 €vegetarian

Aubergine roasted over open flame and blended into a smoky, velvety paste, seasoned with tahini, garlic and lemon. A thread of olive oil and fresh mint lift it, while roasted pine nuts add a gentle crunch. Every spoonful balances silken texture with deep, smoky aroma — an oriental mezze classic, perfect with warm flatbread.

Baba ganoush – on our menu as baba ghanoush – is one of the best-known aubergine dips of the Levant. The secret is the fire: the aubergines are roasted over an open flame until the skin is charred and the flesh is soft and smoky. Only then does it go into the bowl with tahini, garlic and lemon. The blackened skin comes off first; what’s left is the soft centre that has soaked up all that smoke. Skip the roasting and the dip tastes flat.

What it’s called and exactly what goes into it changes from region to region – sometimes baba ganoush is a smooth dip, sometimes more of a chunky salad. At Dunya in Mannheim we make the creamy version.

How we serve it

In a shallow bowl, with a drizzle of olive oil, fresh mint and toasted pine nuts on top, and warm flatbread on the side. The pine nuts aren’t just for show: they add the bite that a velvety dip needs.

What goes with it

Baba ganoush is a starter for sharing. It works best alongside hummus and muhammara, so you’ve got something nutty, something spicy and something smoky side by side. If you don’t want to choose, order the small mixed starter platter, which has all three.

That smokiness goes particularly well with grilled food. Follow it with a Dunya Grill Platter or shish taouk and you’re all set.

For a crowd

Aubergine dips belong on every Middle Eastern spread, whether it’s a family party or a reception. For larger groups we deliver mezze as catering within about 70 km of Mannheim – or you can celebrate with us in our event hall.

FAQ

Good to know

Is baba ganoush vegetarian?

Yes. It’s made from roasted aubergines, tahini (sesame paste), garlic, lemon and olive oil, finished with mint and pine nuts.

What’s the difference between baba ganoush and moutabal?

Both start with roasted aubergine. Our moutabal is also stirred with yoghurt and served with pomegranate seeds, while baba ganoush sticks to tahini, lemon and pine nuts.

Is baba ganoush spicy?

No. It’s smoky and mild – the garlic and lemon add freshness, not heat.

Can I order baba ganoush for a party?

Yes. We put together mezze for celebrations and company events as part of our catering – just mention baba ganoush in your enquiry.
