Hummus is simply the Arabic word for ‘chickpea’ – and that’s exactly what it’s all about: chickpeas cooked until soft, then blended with tahini and lemon until the dip is perfectly silky. It’s finished with olive oil, a dusting of paprika and a few whole chickpeas.

How to eat hummus

With warm flatbread, torn off and dipped in – ideally shared from one bowl. Hummus goes with everything: falafel, grilled meat, and as part of a mixed starter platter.

More than a starter

If you want something heartier, order hummus bil lahme, topped with pan-fried meat. And at parties, hummus is part of every catering buffet.
