Shish taouk is a skewer with two homelands. The name is Turkish – shish tavuk, which is how it appears on our menu – but in Lebanon and Syria it’s at least as popular under the name shish taouk, served in every grill house and often in a sandwich too. We serve it as a plate with all the trimmings.

Marinated and flame-grilled

The chicken breast is cut into cubes and marinated in spices. Grilled over an open flame, it gets a smoky sheen on the outside and stays juicy inside. Chicken breast is lean, which is why the marinade matters so much: it protects the meat and gives it flavour.

The plate

It comes with grilled tomato and onion, which turn soft and sweet on the grill. On the side, choose white rice or crispy fries. Three dips complete the plate: creamy garlic dip, hummus made from chickpeas and sesame paste, and spicy muhammara made from walnuts and red peppers.

Shish taouk and our other skewers

Lamb instead of chicken: the tikka skewer. Minced lamb: the Dunya kebab. If you can’t decide, take the Dunya Grill Platter, which includes a shish taouk skewer. And if you’d like a whole bird: the Dunya Chicken Special.
