On Arab grills, you’ll usually find two kinds of lamb skewer side by side: minced and whole pieces. The tikka skewer is the second kind – marinated cubes of lamb, grilled over hot coals. If you want a lamb skewer where the meat itself is the star, this is the one to order.

Where the name comes from

Tikka comes from Persian and Turkish and means ‘piece’. In Iraqi and Syrian cooking, lahm tikka means cubes of lamb on a skewer – simply marinated, so the flavour of the meat comes through.

From the grill to your plate

The cubes are carefully marinated and grilled over the coals until lightly browned outside and juicy inside. They come with grilled vegetables and spicy chilli bread, plus white rice or fries on the side.

Three dips

The tikka skewer comes with a creamy garlic dip, hummus made from chickpeas and sesame paste, and muhammara made from walnuts and red peppers. Together, the three dips turn the skewer into a little barbecue on a plate.

Our skewers compared

Mince instead of cubes: the Dunya kebab. Chicken instead of lamb: shish taouk. All the skewers together, plus chicken wings: the Dunya Grill Platter.
