Whole grilled chicken – farrouj mashwi – is one of those dishes people in the Levant pick up at the weekend for the whole family. The Dunya Chicken Special is our version: a whole chicken, marinated in our own spice blend. If you’re after Arabic-style grilled chicken in Mannheim, this is the one.

Over an open flame

The chicken cooks over an open flame until the skin is crisp and golden, while the marinade keeps the meat underneath tender and juicy. A whole chicken has its advantages, too: everyone gets their favourite bit, whether that’s the breast, a leg or the wings.
