If you’ve ever been to Riyadh, Jeddah or Kuwait, you’ll know broasted chicken: chicken pieces with a thick, crackling crust, sold on practically every street. The technique comes from 1950s America, but in the Gulf it has long been part of everyday eating. Ours comes with coleslaw and corn on the cob.

Fried under pressure

The difference from ordinary fried chicken is the equipment. The chicken is cooked in a sealed pressure fryer, which is quicker and keeps more of the juices in. The outside turns into a thick, golden crust while the meat inside stays tender.

The marinade

Before they’re coated, the pieces sit in a spice mix that we keep to ourselves. It flavours the meat under the crust, so it isn’t just the coating that’s well seasoned.

On the side

Creamy coleslaw cools things down and adds freshness; the grilled corn brings a touch of sweetness. This dish doesn’t need anything else.

Crispy chicken, compared

For groups

Hummus and batata harra are good starters to share. Broasted chicken is always popular at family parties with children – we’re happy to advise on catering.
