In Yemen and the Gulf, mandi made with lamb is a meal for guests and special days. We serve it with a whole lamb shank – the cut that stays juiciest during long cooking. It comes with a crisp crust, a hint of smoke and raisin rice.

How mandi works

Mandi comes from the Hadhramaut region of Yemen. Traditionally, the meat cooks in an underground oven above the rice, so the juices and smoke seep down into the grains. The gentle smokiness of our rice and our own Dunya spice blend are a nod to that.

Raisins and nuts

Unlike our chicken mandi, this version has raisins and toasted nuts on the rice. The sweetness of the raisins and the crunch of the nuts suit the richer flavour of lamb. The red sauce brings the fire, the green salad the freshness.

Which lamb dish?

We serve lamb shank on rice in several ways, each with its own character:

  • Smoky, with raisins and nuts: lamb shank mandi.
  • Richly spiced, with vermicelli and crispy onions: lamb shank biryani.
  • With peas, pistachios and yoghurt and cucumber sauce: kharouf mahshi.
  • Slow-cooked, with white beans and a pomegranate salad: quzi.

For the table

Hummus bil lahme or baba ganoush make good starters. Lamb on rice is easy to plan in for weddings and family celebrations – find out more about our wedding catering.
