In the Gulf, lamb biryani is what you put in front of guests when you want them to know they’re welcome. A whole shank sitting on the rice turns it into a real feast. And that’s exactly how we serve it here in Mannheim.

Slow-cooked

Lamb shank is a cut that needs time. It’s full of connective tissue that only softens with long, slow cooking – but then the meat practically slides off the bone by itself. You can taste the patience.

The rice

Golden yellow and spiced, topped with crispy fried onions, vermicelli and toasted nuts. The onions are what set this version apart from our chicken biryani: they add a sweet depth that suits the richer lamb. Biryani itself originally comes from the Indian subcontinent and has long been at home in the Gulf states.

On the side

A warm pot of chickpeas in a spiced sauce – for spooning over the rice – and a fresh tomato and cucumber salad.

Lamb on rice: your options

If you love lamb on rice, you’ve got a few ways to go. Smoky: lamb shank mandi. With peas, pistachios and a yoghurt and cucumber sauce: kharouf mahshi. With raisins and white beans: quzi.

For the table

Hummus and kibbeh make good starters. Lamb biryani is also easy to plan for family celebrations in our event hall.
