Ful – Foul on our menu, Arabic for ‘fava beans’ – is one of the oldest dishes in Arabic cooking. In Egypt it’s called ful medames and is considered the national dish; in Sudan, Syria, Jordan and Lebanon it’s just as much a breakfast staple. The beans are cooked for a long time until soft, and only dressed at the table.

How we serve ful

At Dunya in Mannheim we make our ful from tender fava beans, with fresh garlic, lemon juice and olive oil. Fragrant herbs add savoury depth and fresh mint rounds it off. Pomegranate seeds on top give a fruity contrast to the earthy beans.

It comes with warm flatbread. Scoop the beans up with the bread rather than a spoon – that way the oil doesn’t get left behind in the bowl. In the Levant, people often season their ful again at the table with extra lemon or oil. Taste it as it comes first, then decide.

What goes with ful

Ful is hearty and can take bold partners. Falafel, which traditionally sits next to ful on Egyptian tables, is a great match, as is a bowl of hummus. For something fresh, add a small fattoush.

As a starter before a main course, ful is easy to share. After that, try a falafel plate if you want to stay vegetarian, or a shawarma plate.

For bigger groups

FAQ

Good to know

What is ful?

A dish of cooked fava beans dressed with garlic, lemon juice, olive oil and herbs. We add mint and pomegranate seeds.

Is ful vegetarian?

Yes, it doesn’t contain any meat.

Is ful a breakfast or a starter?

Both. In Egypt and the Levant it’s often eaten in the morning; at Dunya it’s one of our cold starters and works at any time of day – we’re open daily from 12 noon to 10 pm.

Is ful filling?

Yes, beans are pretty substantial. With flatbread, one portion is enough for a light meal; shared, it makes a good start.
