Fasouliya simply means ‘beans’ – and anyone who grew up in Iraq associates the word with a pot that’s been sitting on the stove for hours. We serve ours with lamb and basmati rice.

A dish that takes its time

White beans need patience. Only after a long, slow simmer do they turn soft enough to melt in the mouth and thicken the tomato sauce. The lamb cooks along with them and gives the sauce its depth. Fresh herbs go in at the very end.

Timman and marag

In Iraqi cooking, rice is called timman and the stew that goes with it marag. Together they make the classic lunch: rice on the plate, sauce on top. Fasouliya is one of the best-known marag dishes, along with bamia made with okra.

Beans, okra, potatoes: our stews compared

  • Fasouliya: white beans, lamb, tomato, herbs.
  • Bamia: okra with lamb in tomato sauce, rice with toasted nuts.
  • Yakhnet el-lahma: lamb and potatoes in a golden spiced sauce, in a clay pot.

What goes with it

A light, zesty salad is the best partner – tabbouleh with parsley and lemon, for example. If you like, begin with something small such as kishk. Stews are easy to prepare for lots of guests at family gatherings and funeral receptions – find out more about our catering.
