In Iraq, almost every lunch comes down to two things: rice, and a stew spooned over it. Bamia is one of the best loved. We make ours with lamb.

Okra – the little green pod

Bamia is Arabic for okra, a small green pod used widely across the Middle East, North Africa and South Asia. It’s still fairly unfamiliar in Germany. Slow cooking makes it tender and gives the sauce a lovely thickness.

Slow-cooked

The okra and lamb simmer together in a deep red tomato sauce until the flavours meld. It takes time, and the result tastes like proper home cooking. It comes with basmati rice topped with golden toasted nuts.

How to eat bamia

The sauce belongs on the rice. Spoon it over a little at a time so every grain gets its share.

How it compares with our other stews

Made with white beans instead of okra, it becomes fasouliya. Lamb and potatoes in a golden sauce is yakhnet el-lahma. And without meat, with aubergines baked in a clay pot, there’s tepsi badinjan.

To start

A bowl of lentil soup or a small fattoush is a good way to begin. Stews like bamia can also be planned in for family celebrations as part of our catering.
