In Arabic cooking, yakhne is what English speakers would call a stew: meat and vegetables slowly cooked together. Yakhnet el-lahma is the version with lamb and potatoes, seasoned with Middle Eastern spices. At Dunya, it comes to the table in a clay pot.

Served in a clay pot

The lamb and potatoes simmer in a golden sauce until the meat is tender and the potatoes have soaked up the spices. It’s served in the clay pot, which keeps it warm for a long time – handy when you like to take your time over a meal.

On the side

White rice with toasted almonds and cashews, to spoon the stew over. Plus pink pickled turnips – known in the Levant as lift – olives and fresh lemon. The sharpness of the turnips and lemon balances the rich sauce.

Three stews, three characters

  • Yakhnet el-lahma: lamb and potatoes in a golden spiced sauce.
  • Bamia: okra and lamb in tomato sauce.
  • Fasouliya: white beans and lamb in tomato sauce.

Without meat, and also in a clay pot: tepsi badinjan with aubergines.
