On the Levantine coast – in Beirut, Tripoli, Latakia – grilled fish is called samak mashwi, and it almost always comes to the table whole. It’s served with tahini, the sesame sauce that’s as natural a partner for fish in the region as lemon is. That’s exactly how we serve it in Mannheim.

Butterflied and grilled

The sea bream is opened out lengthways so that it cooks evenly and the heat reaches every part. On the grill, the skin turns golden and smoky while the flesh stays tender and moist – and because it’s butterflied, it comes away from the bone easily.

Three companions

The fish comes with three dips: hummus, muhammara made from walnuts and red peppers, and a silky tahini sauce. Tahini is the classic partner for fish – nutty and slightly tangy. On the side, crispy potato cubes, grilled vegetables, fresh mint and herbs.

What goes with it

A light salad is the best way to start: fattoush or tabbouleh, with plenty of parsley and lemon. If you like spicy potatoes, add some batata harra.

Who it’s for

Anyone who fancies a break from meat but still wants something from the grill. At a table with friends ordering the grill platter or skewers, it’s the lighter choice. To book a table, head to our reservations page.
